Easy Baked Vegetables Recipe

Today I'd like to share with you very easy recipe of a meal that I love to make. Baked vegetables! It is perfect as a side or main entree, and most importantly super healthy and delicious. All you need is any vegetables of your choice, salt and spices, couple of spoons of olive oil and some mayonnaise (optional). Let's begin!

Choose any vegetables that you love, cut and slice them up. I picked onions, carrots, peppers, potatoes, mushrooms, zucchini and green beans. You'll need couple of each vegetable, or some more of your favorite! If you choose to add potato, try to slice it thinner, since it takes relatively longer to cook than other veggies. Now, put all cut and sliced veggies in the bowl and mix them up. In a separate small dish take 3-4 tablespoons of olive oil and add some salt and spices of your choice. Mix the spices with oil and drizzle over the vegetables. Mix the vegetables once again with the spices mixture, in order to spread spices to all veggies. 

Now put the vegetables in a baking glass/pan. The following step is optional, but I really like it this way. It adds some yummy flavor to the meal. Spread 1-2 tablespoons of mayonnaise over the vegetables. Preheat oven to 400 F and bake the vegetables for 50-60 minutes (If you choose to add potatoes, it takes up to an hour, once potatoes are ready, the vegetables are done).

That's it! Now serve the veggies as a main entree or as a side dish and enjoy!
