Eggplant Sandwiches


Hello, lovelies! Today I want to share with you a recipe of a delicious meal that is easy to make. This is actually one of the first meals I learned to make in the beginning of my "cooking adventures". I named it "Eggplant Sandwiches". These sandwiches can be served as an appetizer, side dish or even the main course. Hope you enjoy!

The main ingredients for this meal are: eggplant, eggs, tomato and salt. The rest is up to you, you can always improvise what you want to add as a layer of your eggplant sandwich. Let's get it started!


Cut the eggplants into circles (around 5-8 mm wide), as shown in the picture. Slightly beat eggs in a bowl and add some salt (and pepper or your favorite spice, if you wish). Now, dip the eggplant pieces in the eggs and start frying them on the pan on a medium heat. Turn the eggplant once one side becomes slightly orange, i.e. the egg is completely cooked. Cook all of the eggplant pieces the same way. Now cut the tomato as a circle and create a sandwich using two eggplant pieces and tomato in between. You can go ahead and serve the meal, but if you want to add extra flavor, you can place some chopped cilantro or small amount of chopped garlic over the tomato. My husband loves meat and I love garlic. Unfortunately, my husband does not like to eat raw garlic, so I sauteed some ground meat and chopped garlic together on olive oil (the meat looks dark, because I added some red paprika for the flavor when sauteing). Then I spread the mix on top of tomato and placed the second piece of an eggplant to complete the sandwich. And voila! It's ready to serve!
