Easy Stuffed Peppers Recipe
Happy Friday everyone! Today I would like to share with you a recipe of stuffed peppers. This recipe can be modified in any way you want by adding more things into stuffing, such as greens and other veggies. Let's get started!
You'll need:
4-5 bell peppers (color of your choice)
1/4 lb beef
1 medium sized onion
2 medium sized potatoes
1 1/2 cup rice
3-4 tbsp of cooking oil
1 teaspoon of salt and some spices
Optional: 2 carrots and an onion
Soak rice in warm water for 15-20 minutes. Remove seeds and membranes out of the peppers. Cut into small cubes onion, potatoes and beef (you can use ground beef if you want).
Add rice to vegetables and meat. Add salt, spices and cooking oil (I used olive oil). Now mix everything and stuff peppers with the ready mixture.
Once peppers are ready, it's time to cook! There are many ways to cook stuffed peppers.
Way 1: Just put your ready stuffed peppers in the pot and add water (water should be covering at least half of the pepper, as shown in the picture below). Wait till water boils, then lower the heat and put the lid on. 45-50 minutes and peppers are done!

Way 2: Chop some onions and carrots (or any vegetables of your choice), stir fry lightly in cooking oil and place stuffed peppers on top. Pour water right away, add pinch of a salt to the water and wait until it boils. Then lower the heat and put the lid on. Peppers will be ready in 45-50 minutes. In this way of cooking you will have a vegetable soup on the side.
Another way of cooking will be just using a steamer pot to cook the peppers.
